  • 450g thick sausages
  • 1½ cups chicken stock
  • 600g small new potatoes, washed
  • 1 sprig thyme
  • 1 bay leaf
  • flaked salt

  • 2 cloves garlic, peeled and finely chopped
  • ½ cup white wine

Directions

  9. To serve, place the potatoes onto a platter with the sausages which have been sliced into thick rounds and pour sauce over and finish with parsley.

  • 400g veal mince
  • 300g pork mince
  • ½ cup plain flour
  • rice bran oil (for frying)
  • flaked salt

  • ½ cup milk
  • 2 slices white bread
  • 1 tbsp finely chopped
  • flat leaf parsley
  • 2 garlic cloves, peeled and finely chopped
  • 1 egg yolk
For the Sauce:
  • 2 brown onions, peeled and finely diced
  • 2 garlic cloves, peeled and finely diced
  • 1 cup white wine
  • 300g canned, peeled, chopped, tomatoes
  • 1 bay leaf
  • 1½ tbsp freshly chopped oregano leaves

Directions

  1. Combine the veal and pork. Mix in a bowl and season lightly with salt and pepper. 
  2. Place the milk and bread together in a separate bowl, allowing the milk to soak in. 
  3. Add to the meat the parsley, garlic, egg yolk and milk soaked bread. 
  4. Mix all the ingredients together. Ideally this is done with a gloved hand because it makes it much easier to combine thoroughly.
  5. Shape the mixture into small meatballs and dust lightly with flour, shaking off the excess.
  6. Set the Minut’Cook onto the Browning setting.
  7. Heat, enough oil for shallow frying then cook the meatballs for 3-4 minutes or until lightly browned.
  8. Remove and drain on kitchen paper towel and set aside. 
  9. It may be necessary to cook the meatballs in two batches.
  10. To make the sauce, firstly remove most of the oil from the cooker. 
  11. Then add the onions and garlic cook for 3-4 minutes on the Sauté setting. 
  12. Add the wine, tomatoes, bay leaf and oregano and cook for a further 2-3 minutes. 
  13. Season to taste and return the meatballs to the cooker. 
  14. Close the lid and cook on the Low Pressure setting - Timer: 5 minutes.

  • 500g cherry tomatoes, cut in half
  • ¼ cup sweet basil leaves
  • 1 tbsp sugar
  • 4 x 125g tuna steaks
  • ½ cup olive oil
  • 1 red onion, peeled and finely diced

  • 200g dried chickpeas
  • ½ onion, peeled and finely chopped
  • 1 bay leaf
  • 1 tomato, finely chopped
  • ½ red pepper (capsicum), seeded and finely chopped
  • ¼ cup shredded, fresh basil leaves
  • ½ tsp fresh lemon juice
  • flaked salt
  • 400g baby spinach leaves, washed and drained
  • ½ cup olive oil
  • 5 cloves garlic, peeled and finely chopped

  1. Soak the beans overnight. Then place the drained beans, onion and bay leaf into the Minut’Cook and just cover with water, season lightly with salt. 
  2. Close lid and cook on the High Pressure setting - Timer: 30 minutes.
  3. Open the cooker and add tomato, pepper, basil and lemon juice. 
  4. Stir well to combine with beans.
  5. Put the steam basket into position and add the spinach. 
  6. Close the lid. Cook on the Low Pressure setting - Timer: 1 minute. 
  7. Remove the chickpeas and spinach and keep warm.
  8. Add the garlic, cook on the Simmer setting for 5 minutes. 
  9. Add the fish and cover with garlic oil and cook for 5 minutes longer or until the fish is lightly golden. 
  10. Turn once during cooking and place the chickpeas and spinach onto a serving platter and finish with the cooked fish.

  • 800g sebago potatoes
  • 3 eggs
  • 2 tbsp flat leaf parsley, roughly chopped

  • 400g carrots
  • 250g frozen green peas
  • 250g canned tuna, drained
  • freshly cracked black pepper
For the mayonnaise:
  • 3 egg yolks
  • 1½ cups olive oil
  • 1 tbsp lemon juice 

Directions

  • Peel the potatoes and carrots. Cut into cubes about 1½ cm, place in the cooker, just cover with water and lightly season with salt. 
  • Close the lid and cook on the High Pressure setting - Timer: 2 minutes. 
  • Open the lid, add the peas and close again. 
  • Cook on the High Pressure setting - Timer: 1 minute.
  • Drain the vegetables and allow to cool.
  • Cook the eggs until hard boiled in a separate saucepan. 
  • Allow to cool then peel and cut into quarters. 
  • Break the tuna into medium sized pieces and set aside.
  • To make the mayonnaise, place the egg yolks and lemon juice into a mixing bowl, add a pinch of salt.
  • Ideally use a stick blender or small food processor bowl to beat the egg yolks while slowly drizzling in the oil. 
  • Season to taste and then place the vegetables, eggs and tuna into a bowl.
  • Add the mayonnaise and parsley and gently toss to combine. Season to taste.

  • 1 Red Capsicum, diced
  • 1 Onion, diced
  • 1 cup Mushrooms, sliced

  • 1.5kg diced Beef
  • 1/2 cup Plain Flour
  • 2 Tbs Tomato Paste
  • 2 Carrots, peeled and sliced

Directions

  1. Over medium heat sauté capsicum, onion, mushroom and garlic in olive oil in the Pressure Cooker (lid off) until soft (2-3 minutes). Remove from pan and set aside.
  2. Place beef, flour and salt and pepper in a plastic bag and shake to coat.
  3. Brown meat over high heat in two batches (around 2 minutes each batch).
  4. Return beef and vegetables to the Pressure Cooker and add paste, carrots and thyme and stir.
  5. Pour in Guinness and stir through. Bring to the boil for 1 minute to cook off the alcohol.
  6. Close and lock Pressure Cooker and bring to pressure on high heat using setting 2 (Pressure is reached when the red Pressure Indicator has risen).
  7. Once at pressure, turn down the heat and cook for 20-45 minutes.
  8. Remove from heat. Quick-release pressure by placing under a running tap with cool water for a few second.
  9. Serve stew with mashed potatoes or crusty bread.

  • ½ cup ground coriander
  • 1 tsp finely chopped fresh lemon grass

Directions

  1. Wash rice well and drain. Then set Minut’Cook onto High Pressure setting - Timer: 3 minutes. 
  2. Add rice, coconut milk, hot water, turmeric, cumin, coriander and lemongrass. Close lid and cook. 
  3. Open lid and fluff rice with a fork - add half the chopped coriander and stir through.
  4. Lay fillets of fish onto the rice and top with the remaining coriander, drizzle with fish sauce and add a little chili paste to each fillet.
  5. Close lid and set cooker onto Low Pressure setting - Timer: 3 minutes.
  6. Gently lift fish fillets out of the cooker onto a serving platter. Serve with cooked rice.

  • 3 tablespoons cooking oil
  • 1 large onion, chopped

Directions

  • 2 tsp olive oil
  • 1 (about 130g) chorizo sausage, thinly sliced
  • 200g (1 cup) basmati rice, rinsed, drained
  • 1 bunch asparagus, woody ends trimmed, cut into 4cm lengths
  • 1 Lebanese cucumber, coarsely chopped
  • 250g punnet cherry tomatoes, halved
  • 2 shallots, trimmed, thinly sliced
  • 8 (about 1.5kg) chicken thigh cutlets, skin removed
  • 1 brown onion, halved, thinly sliced
  • 2 celery sticks, thinly sliced
  • 1/2 tsp saffron threads
  • 250ml (1 cup) salt-reduced chicken stock
  • 1/3 cup small fresh mint leaves

  1. Heat oil in a pressure cooker over medium-high heat. 
  2. Cook chorizo, stirring, for 3 minutes or until crisp. Transfer to a bowl.
  3. Add half the chicken and cook, turning occasionally, for 5 minutes or until browned.
