Ingredients And Quantity

  • 1 Tbs Olive oil
  • 1 Onion, diced
  • 2 Garlic cloves, crushed
  • 2 cups Mushrooms, sliced
  • 2 Chicken breasts, halved and sliced
  • 2 cups Arborio rice
  • 1 L Chicken stock
  • 1 cup Baby Spinach
  • 1 cup Parmesan, grated

Directions

  1. In Pressure Cooker on high heat, combine oil, garlic, onion and mushroom to soften for 1-2 minutes.
  2. Add chicken and brown for 1 minute.
  3. Stir through rice to toast for 1 minute, which will release the starch.
  4. Add stock and mix well.
  5. Close and lock Pressure Cooker and bring to pressure on high heat using setting 2 (Pressure is reached when the red Pressure Indicator has risen)
  6. Once at pressure, turn down the heat and cook for 8 minutes.
  7. Remove from heat. Quick-release pressure by placing under a running tap with cool water for a few seconds.

Ingredients And Quantity

  • 1 tablespoon olive oil
  • 1 cup orange juice
  • ½ cup dry red wine
  • ½ cup low salt chicken stock
  • 4 boneless chicken breast halves
  • 2 tablespoons honey
  • 3 lemon slices, 6 mm thick
  • ½ cup chopped fresh parsley
  • 1½ cups pitted prunes
  • Lemon slices, for garnish
  • 1/3 cup pitted green olives, cut in half
  • 2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
  • ½ teaspoon each: salt, lemon
  • 1 medium leek, white part only, chopped
  • 1 large plum tomato, seeded and diced
  • 2 garlic cloves, minced
  • 3 cups hot cooked rice
  • pepper seasoning, ground cumin

Directions

  1. Heat olive oil in the pressure cooker over high heat. 
  2. Combine salt, lemon pepper seasoning and cumin, then sprinkle over both sides of chicken breasts.
  3. Add chicken to pressure cooker and saute on both sides, about 5 minutes.
  4. Transfer chicken to plate and keep warm.
  5. Reduce heat to medium-high. Then add leek and garlic, cook and stir for about 3 minutes.
  6. Add chicken, lemon slices, prunes, olives and thyme. 
  7. Combine orange juice, wine, chicken stock and honey; pour over chicken.
  8. Close lid, bring to high pressure then lower heat and cook for 25 minutes.
  9. Remove from heat and release the pressure. 
  10. Remove lid, set cooker back on stove and stir in tomatoes. 
  11. Turn heat on low and cook for approximately 2 more minutes, stirring frequently.
  12. Serve chicken mixture over rice.

  • 2 tsp olive oil
  • 1 (about 130 g) chorizo sausage, thinly sliced
  • 200 g (1 cup) basmati rice, rinsed, drained
  • 1 bunch asparagus, woody ends trimmed, cut into 4 cm lengths
  • 1 Lebanese cucumber, coarsely chopped
  • 250 g punnet cherry tomatoes, halved
  • 2 shallots, trimmed, thinly sliced
  • 8 (about 1.5 kg) chicken thigh cutlets, skin removed
  • 1 brown onion, halved, thinly sliced
  • 2 celery sticks, thinly sliced
  • 1/2 tsp saffron threads
  • 250 ml (1 cup) salt-reduced chicken stock
  • 1/3 cup small fresh mint leaves
  • 1 tsp fresh lemon juice

Directions

  1. Heat oil in a pressure cooker over medium-high heat. 
  2. Cook chorizo, stirring, for 3 minutes or until crisp. Transfer to a bowl.
  3. Add half the chicken and cook, turning occasionally, for 5 minutes or until browned. 
  4. Transfer to the bowl with chorizo and then repeat with the remaining chicken.
  5. Add onion and celery and cook, stirring, for 2 minutes or until slightly soft. 
  6. Return chorizo and chicken to the cooker. 
  7. Add saffron and stock, and bring to a simmer.
  8. Cover and seal the cooker. Then increase heat to high. 
  9. Cook for 5-10 minutes or until steam escapes at a constant rate and there is a regular hissing sound. Reduce heat to low. 
  10. Cook for a further 25 minutes. Then release steam following manufacturer’s instructions. 
  11. Remove lid. Then use tongs to transfer chicken to a large bowl. 
  12. Cover with foil to keep warm.
  13. Add rice to the chorizo mixture in the pressure cooker. 
  14. Cover and seal the cooker. Then increase heat to high. 
  15. Cook for 5 minutes or until steam escapes at a constant rate and there is a regular hissing sound. Reduce heat to low. Cook for a further 3 minutes.
  16. Release steam following manufacturer’s instructions. 
  17. Remove lid. Then add asparagus and stir well. 
  18. Cover the cooker with the lid but do not seal and set aside for 10 minutes or until rice is tender.
  19. Combine cucumber, tomato, and shallot, mint and lemon juice in a bowl. 
  20. Season with salt and pepper. Remove chicken meat from bones. 
  21. Add chicken to pilaf and then divide among serving bowls and serve with salad.
