Lentil Lamb And Mushroom Casserole

Lentil Lamb And Mushroom Casserole Recipe

Ingredients And Quantity

  • 400 g diced lamb
  • 3 green shallots, thickly sliced
  • 1 tomato, finely diced
  • 300 g brown lentils
  • ½ cup white wine
  • 1 cup plain flour
  • 200 g shitake mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, peeled and crushed
  • flaked salt
  • freshly cracked black pepper

Directions

  1. Lightly dust the lamb with flour, shaking off the excess.
  2. Soak the shitake for 20 minutes in hot water. 
  3. Drain and discard water. Cut the mushrooms into thick slices.
  4. Set Minut’Cook onto the Browning setting. Heat, the oil. 
  5. Add lamb, garlic and shallots. Then cook for 4 minutes.
  6. Add tomato and mushrooms and cook a further 3 minutes.
  7. Add the lentils and wine and add extra water if required to just cover the lentils and vegetables.
  8. Close the lid and cook on the High Pressure setting – Timer: 8 minutes. 
  9. Open the lid to check if the dish is cooked. If necessary, cook a little longer. Season to taste.

Savoury Sausage Casserole

Sausage Casserole Recipe

Servings: 4
Total time: 8 minutes

Ingredients And Quantity

  • 450 g thick sausages
  • 1½ cups chicken stock
  • 600 g small new potatoes, washed
  • 1 sprig thyme
  • flaked salt
  • 1 bay leaf
  • 1 brown onion, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1 tbsp oil
  • ½ cup white wine
  • freshly cracked black pepper
  • 2 tbsp chopped flat leaf parsley 

Directions

  1. Prick the sausage with the tip of a small sharp knife.
  2. Set the Minut’Cook on the Browning setting.
  3. Heat oil and add the sausages, onion and garlic.
  4. Cook for 3-4 minutes or until the sausages begin to lightly brown.
  5. Add the wine, stock, thyme and bay leaf. Season lightly and then bring to boil on the Browning setting.
  6. Add the potatoes. 
  7. Close the lid and cook on the High Pressure setting – Timer: 8 minutes. 
  8. Season the sauce to taste.
  9. To serve, place the potatoes onto a platter with the sausages which have been sliced into thick rounds and pour sauce over and finish with parsley.

Stewed Meatballs

Stewed Meatballs Recipes
 

Servings: 4
Total time: 25 minutes

Ingredients And Quantity

  • 400 g veal mince
  • 300 g pork mince
  • ½ cup plain flour
  • rice bran oil (for frying)
  • flaked salt
  • freshly ground black pepper
  • ½ cup milk
  • 2 slices white bread
  • 1 tbsp finely chopped
  • flat leaf parsley
  • 2 garlic cloves, peeled and finely chopped
  • 1 egg yolk

For the Sauce:

  • 2 brown onions, peeled and finely diced
  • 2 garlic cloves, peeled and finely diced
  • 1 cup white wine
  • 300 g canned, peeled, chopped, tomatoes
  • 1 bay leaf
  • 1½ tbsp freshly chopped oregano leaves

Directions

  1. Combine the veal and pork. Mix in a bowl and season lightly with salt and pepper. 
  2. Place the milk and bread together in a separate bowl, allowing the milk to soak in. 
  3. Add to the meat the parsley, garlic, egg yolk and milk soaked bread. 
  4. Mix all the ingredients together. Ideally this is done with a gloved hand because it makes it much easier to combine thoroughly.
  5. Shape the mixture into small meatballs and dust lightly with flour, shaking off the excess.
  6. Set the Minut’Cook onto the Browning setting.
  7. Heat, enough oil for shallow frying then cook the meatballs for 3-4 minutes or until lightly browned.
  8. Remove and drain on kitchen paper towel and set aside. 
  9. It may be necessary to cook the meatballs in two batches.
  10. To make the sauce, firstly remove most of the oil from the cooker. 
  11. Then add the onions and garlic cook for 3-4 minutes on the Saute setting. 
  12. Add the wine, tomatoes, bay leaf and oregano and cook for a further 2-3 minutes. 
  13. Season to taste and return the meatballs to the cooker. 
  14. Close the lid and cook on the Low Pressure setting – Timer: 5 minutes.
