Ingredients And Quantity

  • 226 g Italian sausage, casing removed, crumbled
  • ½ cup diced onion
  • 3 cloves garlic, crushed
  • ½ cup parsley, chopped
  • 425 g canned chick peas and juice
  • 450 g fresh or frozen spinach
  • 1 cup mild to medium salsa
  • 2.8 litres chicken stock
  • 1 cup lentils
  • 1 chicken breast, split with bone, uncooked
  • 2 tablespoons olive oil

Directions

  1. Place 1 tablespoon olive oil in cooker. Now cook sausage, drain and set aside. 
  2. Add 1 tablespoon olive oil to pressure cooker and saute onion and garlic. 
  3. Do not brown. Now add barley and sauce.
  4. Add browned sausage, lentils, uncooked chicken breast to cooker then add enough chicken stock to cover ingredients in cooker. 
  5. Close lid, bring to high pressure then lower heat on stove and cook for 9 minutes.
  6. Remove from heat and release pressure using the natural-release method. Now open the pressure cooker. 
  7. Remove chicken, shred meat and return to cooker.
  8. Add remaining chicken stock, beans, spinach and salsa to soup mixture and heat thoroughly.

Ingredients And Quantity

  • 3 tablespoons cooking oil
  • 1 large onion, chopped
  • Salt and pepper, to taste
  • 1 cup milk
  • 6 large carrots, sliced thinly
  • 4 large potatoes, sliced thinly
  • 750 ml chicken or vegetable stock
  • 2 teaspoons cumin

Directions

  1. In pressure cooker, saute onion in cooking oil for 3 minutes. 
  2. Add potatoes and carrots and continue to saute for 1 additional minute. Add stock and cumin.
  3. Close lid, bring to high pressure then lower heat on stove and cook for 12 minutes. 
  4. Remove from heat and release pressure using the natural-release method.
  5. Add salt and pepper to taste. Now allow it to cool slightly. 
  6. Puree in blender, mixing alternately with milk until smooth and creamy. Now serve hot.

Delicious White Bean Escarole Soup

Ingredients And Quantity

  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 4 fresh sage leaves, finely sliced
  • 450 g white cannellini beans, quick-soaked
  • ½ cup chopped Italian parsley
  • 226 g lettuce, sliced thinly
  • 2 carrots, finely chopped
  • 3 cloves garlic, minced
  • 6 cups chicken stock
  • Salt and pepper

Directions

  1. Place the rinsed beans in the steamer basket on top of steamer trivet and put inside the pressure cooker to quickly soak the beans.
  2. Now add 6 cups of water. 
  3. Close lid, bring to high pressure and cook for 2 minutes. 
  4. Release pressure using the natural-release method.
  5. Remove beans and rinse again. Your beans are now ready to be cooked.
  6. Add the quick-soaked beans to the cooker and add 1 tablespoon of olive oil and 2 cups water or stock. 
  7. Close the lid, bring to high pressure and cook for 8 minutes.
  8. Release pressure using the natural-release method. Remove and set aside.
  9. Heat olive oil in the pressure cooker. 
  10. Add onion and carrots, cover and simmer for 5 minutes or until tender. 
  11. Next, add the garlic and saute for 1 minute. 
  12. Add half the beans and mash with a potato masher. 
  13. Now add the other half of the beans along with the stock and lettuce. 
  14. Close the lid, bring to high pressure and cook for 10 minutes.
  15. Release pressure using the natural-release method. 
  16. Open lid, add parsley and sage and adjust seasoning. Now simmer for about 5 minutes. 
  17. Serve with bread and salad for a complete meal.
